Spaetzle (German Egg Noodles)

3 eggs
1 cup milk
3 cups flour
1/2 tsp salt
1/4 tsp nutmeg

Beat eggs until foamy. Combine with milk. Mix together flour, salt, and nutmeg. Add eggs and milk a little at a time. If too thick, add 1Tbsp water at a time to desired consistency.

Fill square (Spaetzle – Maker) basket. Place over pot of boiling water or simmering soup. Slide basket back and forth, Spaetzle will drop into boiling liquid. When done, noodles will rise to the top. (2-3 min) Use large slotted spoon to strain. Put in large bowl.

Serves 6-8
Serving suggestion: serve Spaetzle with Rabbit Stew (Hasenpfeffer)
