Curried Chicken

Seasoning (mix to taste)

2 Tbsp Chief curry powder or preference
garlic powder
turmeric powder
cayenne pepper powder and garam marsala

1 4-5 lb chicken cut up
2 Tbsp olive oil
1 cup of onion diced
1 jalapeno pepper chopped
1 scallion chopped

Bone chicken; set aside. Mix seasoning and toss chicken. Brown chicken in olive oil in saucepan. Add remaining ingredients and a little water. Simmer for 45 minutes – 1 hour. Serve with roti or popovers, over rice or spaetzle.

You may substitute duck or rabbit for chicken.
