Whisk together

- 1 cup warm water

- add 2 1/4 tsp yeast

- 1 tsp sugar

- 1 tsp lecithin granules

Add 1 Cup flour
Whisk and allow to proof for 15 minutes

Add 2 1/2 cups flour
1 1/2 tsp salt
Knead for 5 minutes

Allow to rise until double in size (about 1 hour)

Roll into 16″ x 12″ rectangle
Cut in half lengthwise
Roll each half into cylinder shape.
Place on bagette pan

Allow to rise again until double in size (about 1 hour)
Brush tops with egg white and 1 Tbsp water.

Bake at 350 degrees for 25 minutes. Makes two loaves.
