Pig Roast

Injection for splayed hog

1 cup sour orange juice (6 oz. orange juice 2 oz. lemon juice)
1 tbsp oregano
1 tbsp Bay leaves
1 garlic bulb
1 tsp cumin
4 tsp salt
4 oz. water

The hog is splayed and left out to reach room temperature before roasting. Cooking time is about an hour for each 5 lbs of meat.
