Spinach Quiche


1/2 c butter

3 cloves garlic, chopped

1 sm onion, chopped

1 10 oz pkg frozen chopped spinach, thawed and drained

6 oz shiitake mushrooms, reconstituted

1 8 oz pkg shredded cheddar cheese

salt & pepper to taste

1  9 inch unbaked deep dish pie crust

4 eggs beaten

1 cup milk


1. Preheat oven to 375 F.

2. In medium skillet heat butter over medium heat.  Sure garlic and onion in butter until lightly browned.  Stir in spinach, mushrooms, and 1/2 cup cheddar cheese.  Season with salt and pepper.  Spoon mixture into pie crust.

3.  In medium bowl, whisk eggs and milk.  Season with salt and pepper.  Pour into pastry shell.

4. Bake in preheated oven 15 minutes.  Sprinkle with remaining cheddar and bake 30-40 minutes more.
