Fifteen-Bean Soup

15 Bean Soup


1 20oz. Package 15 Bean Soup beans

1 cup onion, chopped

1  can (14.5 oz) diced tomatoes

1 tsp chili powder

Juice of 1 lemon

1-2 cloves minced Garlic (or to taste)

1 lb. Ham, ham hocks, or smoked sausage (optional)


Soak beans overnight in water. Drain.

1. Place rinsed beans in a large pot, cover with 8 cups water, onion and meat.

2. Bring beans to a boil.  Reduce heat and simmer, covered, for 1 1/2 – 2 hours.  Stir occasionally.

3. After simmering, add tomatoes, chili powder, lemon juice, and garlic.  Simmer, covered for another 30 minutes.

4. Add contents of seasoning packet 1 to 2 minutes before cooking is complete.  Salt and pepper to taste.
