Pork Project Part 2 – Feb 2018

The Pork Project continues.   We butchered the third  6-month male yesterday and rested the carcass in the fridge over night.  It’s getting easier to cut the pieces and tie the roasts now that we know how to tie those special knots.  (YouTube again)

The first two hogs were underweight and hardly worth the effort, although it was good practice.  This third one weighed about 60 lbs, so we got a lot more meat from him.  So far we have put about 60lbs  of pork in the freezer.

There are two more males to get to 6 months and the rest (9) are females.  They can grow quite a bit more before slaughter, as there is no need to worry about bortine, which flavors the meat unpleasantly in males who have not been castrated at 1-2 weeks.
