Frittata
Preheat oven to 350 degrees
2 tomatoes (Romas are less jiucy)
onion (diced)
green or banana pepper (diced)
parsley
Himalayan sea salt
ground black pepper
6 eggs
bacon bits (1/2 cup)
avocado or olive oil
In cast iron skillet saute tomatoes, onion, and pepper in oil. Mix eggs, salt, pepper, and bacon. Pour egg mixture into skillet. Stir until egg begins to solidify. Bake in preheated oven for 4-5 minutes.
